Flavour is not simply created by aroma compounds - it is constructed through the interaction of taste, mouthfeel, retronasal olfaction, and cognition. This presentation explores how non-volatile flavour modulation technologies can enhance aroma perception, improve flavour authenticity, and create more engaging drinking experiences. Using beer as a model, we will showcase how a deeper understanding of flavour cognition perception can help bridge the gap between molecules and consumer enjoyment.
