Abstract
The perception of flavor and fragrance is fundamentally driven by our sense of smell, a complex process initiated at the molecular level by olfactory receptors (ORs). In this seminar, I will delve into the fascinating biology of the human olfactory system: explore how the vast array of ORs in the nose interact with volatile molecules and translate them into the rich tapestry of aromas we perceive. The presentation will bridge this fundamental knowledge with practical applications, exploring how understanding receptor activation patterns and odor coding can directly inform rational design and development of new flavors and fragrances. This session aims to equip flavorists and chemists with insights into leveraging OR knowledge for future success.
Biography
Sandeepa Dey is a Bay Area-based biotech consultant. Prior to consulting, Sandeepa gained significant experience directly applying olfactory research to practical challenges within the Flavor & Fragrance sector. She holds a Ph.D. from Duke University, where her research focused on using olfactory receptors to decode smell. This unique background, combining rigorous scientific training with industry-focused application, allows Sandeepa to bridge the gap between fundamental research and commercial product development.
