Smell and taste begin as chemical stimuli, but their impact depends on how the brain processes them. In this keynote, Dr. Paule V. Joseph examines what changes in smell and taste can reveal about human health.

Drawing on her work in chemosensory science and clinical research, Dr. Joseph will discuss how olfactory and gustatory pathways relate to brain function, metabolism, aging, and disease. She will explore why sensory perception varies across individuals, how illness and environmental exposures alter these systems, and why sensory changes often appear early in the course of disease.

This talk offers a health-focused perspective on the chemical senses and highlights the relevance of sensory biology for flavor science in an increasingly diverse and changing sensory landscape.
